HOT. Outside. Seriously. And I baked. You heard me right. It is 94° outside and add that to the sticky humid. A+ day. Oh and, no A/C.
So I decided to make something that is refreshing.

It is the thought that counts. Strawberry Lemonade sounds real good right now doesn’t it?

I also thought I would share my kitchen helper. She always lays as close as possible anytime I am in the kitchen. But she got up when I went to take a picture. Meet Daphne everyone!

And since it was so hot, I forgot photos of the frosting! You will just have to suffice with the final photo of the cookies.


The butter, sugar, lemon zest, baking powder, baking soda, and salt

Strawberry Lemonade Cookies



  • ½ cup butter, softened
  • 1 cup sugar
  • 1 tablespoon grated lemon zest
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup sour cream
  • 1/3 cup lemon juice
  • 2 cups all purpose flour

Position an oven rack in the center of the oven. Preheat oven to 375° F. Line 2 or 3 baking sheets with parchment paper or use ungreased baking sheets.
In a large mixing bowl beat the butter, sugar, lemon zest, baking powder, baking soda, and salt with an electric mixer on medium speed until well combined. Scrape down the sides of the bowl with a rubber spatula to make sure everything is well blended.
Beat in the egg, sour cream and lemon juice until combined.
Beat in the flour with the mixer or stir it in with a wooden spoon.
Drop rounded tablespoons of dough about 3 inches apart onto prepared baking sheets. Bake one cookie sheet at a time in the center of the oven until the tops of the cookies are firm, 8 to 10 minutes.
Remove from the oven and transfer cookies to wire racks to cool completely.

Strawberry Frosting

  • 2 ½ cups powdered sugar
  • 1 tbsp melted butter
  • 4 strawberries mashed to a pulp

Blend in the mixer until it comes together into a frosting. If needed, add a little milk to help it along. You can add strawberry flavoring to give it more of a flavor boost.
