I’ve tried muffins before. Dry ones, tasteless ones, etc. You’ve all tasted muffins that just aren’t very tasty. My muffins of the past were that way. (I was not proud of those)
Since I’ve been unemployed for far too long, I accepted a job for minimum wage at Meijer stocking groceries. This is dangerous. It seems that I am always finding something I need to have. Like blackberries for $.50. Yep a pint. I’ve not ever tried them before so I decided I couldn’t resist the price.
Muffins were a great idea to try blackberries but not be overwhelmed by them if I didn’t find them tasty. These were awesome muffins. The berries were not over powering at all. To me the flavor is very subtle. I hope you try these great muffins!

Blackberry Vanilla Bean Muffins
(Makes 8 muffins)
Ingredients:
- 1 ½ cup flour
- ½ cup white sugar
- 2 tsp baking powder
- ½ tsp salt
- 1 egg
- 1/3 c oil (any will work)
- ½ cup milk
- 1 Vanilla bean
- 1 cup blackberries, frozen or fresh
- ¼ cup brown sugar
Directions:
Add milk to a small sauce pan with a split and scraped vanilla bean. Heat until steamy. Remove from heat and let cool before using in your batter.
Preheat oven to 400° F and combine flour, sugar, baking powder and salt in a medium size bowl. Add in one egg, oil, and milk and mix thoroughly, and then fold in the berries. (Berries may bleed into your batter which is ok).
Grease muffin pan and fill each cup to the top with batter, then add a generous sprinkle of brown sugar on top. Bake for 20 to 25 minutes.
