in Cookie,Fruit

I have been feeling fruity lately. Not in the lose my mind way. If you know me at all I am not big on baked fruit. I pretty much hate it. Baking with it is great since I love to bake, but I won’t eat it. Just won’t. The great thing about finding recipes that are fruit flavored is I get all the goodness of the flavor without having to eat the actually fruit cooked.

When I found this recipe I was excited. Orange and white chocolate are such a great flavor combination. Since I tend to fend off baked goods so I won’t eat them all, some of these went to work. And was told they were wicked good.

I already want to make more!

I had a helper again today

Orange Creamsicle Cookies

 (adapted from Guittard)

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 3/4 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh orange zest, grated
  • 2 Tablespoons fresh orange juice
  • 12 ounces white chocolate chips

Preparation:

Preheat oven to 375°. Line baking sheets with parchment paper.

In a small bowl, combine flour, baking soda, and salt; set aside.

In a large bowl, cream butter and sugars until light and creamy. Beat in egg, vanilla, and orange juice until smooth. Gradually add flour mixture until combined. Stir in orange zest and chocolate chips.

Drop rounded tablespoons onto parchment lined cookie sheets. Bake 8 – 10 minutes or until golden brown around edges. Cool for several minutes on cookie sheets before transferring to rack to cool completely. Store in airtight container.
